Bread and Butter Pudding

Kipróbáltam a valódi Bread and Butter pudding-ot. Nekem nagyon bejön. Felkerült az aktuális kedvenceim listájára. :-)
Megnéztem a recepjét, nagyon egyszerű elkészíteni.

Itt egy magyar recept:
Hozzávalók:
kalács
vaj
4 tojás
3,5 dl tej
2 dl tejszín
cukor, vaníliáscukor
darált dió, vagy aszalt gyümölcs vagy mazsola vagy mindez együtt
lekvár (eper, málna, erdeigyümölcsös)

Elkészítés:
Előveszünk egy közepes jénait vagy kerámia sütőtálat, kivajazzuk. A kalácsot felszeleteljük.A felszeletelt darabokat mindkét oldalán megvajazzuk és megkenjük egy kis lekvárral,rétegesen egymásra halmozzuk a tálban. A rétegek közé darált diót vagy aszalt gyümölcsöket vagy mazsolát szórunk,vagy akár mindet együtt.
A tojásokat felütjük egy tálba, hozzáadjuk a cukrot - a mennyiség ízlés kérdése, én 1 tojáshoz 1 evőkanál kristálycukrot szoktam adni. Robotgéppel habosra keverjük, hozzáadjuk a tejet, a tejszínt és 1 csomag vaníliáscukrot.

A kész öntetet lassan a rétegezett szeletekre öntjük - tapasztalataim szerint úgy lesz a legfinomabb, ha majdnem ellepi. A tetejét megszórjuk egy kevés kristálycukorral.

A sütőtálat egy nagyobb méretű, vízzel félig telt tepsibe fektetjük, és előmelegített sütőben, közepes lángon kb. 30-40 percig sütjük. Ha a teteje már szépen megszínesedett, kivesszük a sütőből, picit hagyjuk meghűlni és utána az állagától függően késsel felkockázva vagy kanállal kiszaggatva tányérra tesszük. Porcukorral meghintve kínáljuk.

Tanácsok:
Kicsit szikkadt kalácsból a legfinomabb.

Bread and butter pudding is one of those classic old English recipes that everyone loves. The addition of marmalade brushed over the bread makes it fantastically crisp, with a zingy orangey bitterness that just makes the whole thing superb. This is another dessert that you don’t want to overcook because you want to have the soft insides contrasting with the crispiness on top.

Preheat the oven to 180ºC/350ºF/gas 4. First make your flavored butter by mixing the butter with the nutmeg, cinnamon and orange zest. Use a little of it to butter a medium-sized shallow, ovenproof dish.

Butter the bread using the flavored butter, then cut each slice in half diagonally. Put the slices in your buttered dish. Now separate the eggs, reserving all 9 yolks but just 1 egg white. Whisk together the egg yolks and egg white with the sugar, then gently heat the milk and cream in a saucepan with the vanilla seeds and pod. Pour into the eggs, stirring all the time. Remove the vanilla pod then pour the mixture over the bread and leave to soak for at least 20 minutes. Put the dish in a roasting tray and pour in enough boiling water to come halfway up the side of the dish. Then put it in the preheated oven for about 45 minutes until the custard has just set. Meanwhile, gently warm the marmalade in a saucepan, then remove the dish from the oven and brush the marmalade over the top of the bread. Pop the dish back into the oven for another 5 to 10 minutes. Allow it to cool and firm up slightly before serving.

Ingredients

  • 25g/1oz butter, plus extra for greasing
  • 8 thin slices bread
  • 50g/2oz sultanas
  • 2 tsp cinnamon powder
  • 350ml/12fl oz whole milk
  • 50ml/2fl oz double cream
  • 2 free-range eggs
  • 25g/1oz granulated sugar
  • nutmeg, grated, to taste

Preparation method

  1. Grease a 1 litre/2 pint pie dish with butter.
  2. Cut the crusts off the bread. Spread each slice with on one side with butter, then cut into triangles.
  3. Arrange a layer of bread, buttered-side up, in the bottom of the dish, then add a layer of sultanas. Sprinkle with a little cinnamon, then repeat the layers of bread and sultanas, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside.
  4. Gently warm the milk and cream in a pan over a low heat to scalding point. Don't let it boil.
  5. Crack the eggs into a bowl, add three quarters of the sugar and lightly whisk until pale.
  6. Add the warm milk and cream mixture and stir well, then strain the custard into a bowl.
  7. Pour the custard over the prepared bread layers and sprinkle with nutmeg and the remaining sugar and leave to stand for 30 minutes.
  8. Preheat the oven to 180C/355F/Gas 4.
  9. Place the dish into the oven and bake for 30-40 minutes, or until the custard has set and the top is golden-brown.
